Il Sale Della Vita


  • 45ml Campari
  • 45ml Fino Sherry
  • 30ml Salted Pineapple Cardamom Cordial
  • 15ml Lemon Juice
  • 2 Dash Angostura Bitter

Add all ingredients together in a shaker with ice and shake vigorously. Strain into a cocktail glass over ice.  Garnish with chocolate and a few grains of salt.

A good friend of mine, Joe Villanueva, my very first instructor in the way of the cocktail, was recently made a Brand Ambassador for Campari!  Though this concept had been sitting at the back of my mind for a while, it was this appointment which made me actualize the concept.  What I wanted to represent that Campari, very much like salt in cooking, is responsible for giving the edge for so many of our favourite cocktails; negroni, americano, boulevardier, and so on.  The name, Il Sale Della Vita, is an Italian phrase which translates to ‘The Salt of Life’, a phrase that is equivalent to ‘salt of the earth’.  I wanted to repeat that concept in this cocktail on multiple levels, in the ingredients, in the garnish, in the use of Campari as a major portion of the recipe list.

Salted Pineapple Cardamom Cordial

  • 300ml Fresh Pineapple Juice
  • 100g White Sugar
  • 15g Green Cardamom Pods, deshelled
  • 2 tbsp Salt

Combine all ingredients and let sit 24 hours refrigerated.  Strain out the cardamom seeds, and transfer to a clean container.   due to the reduced sugar and salt content, I suspect that this ingredient cannot be held for long.  If you wish to make this cordial, make in small quantities and consume quickly
